| so, nothing really new. I'm in the process of re-syncing ROCH 83 English subtitles for Terence and I enjoy a bit of cooking everyday as a hobby, and because we have to eat. XD I thought I should share one of my favorite recipe with you guys, incase you're interested in a tasty Chinese fish dish. Terence absolutely hate fish...but he loves this particular dish I made for him last friday.
Crabmeat over Sole (Hai yok pah suet yue)
Ingredients needed: - 1 table spoon of corn starch - 1 can of crabmeat - 1 cup of cubed sole or fish of your choice. (preferably boneless fillets) - 1 can of chicken stock or broth - 1 stem of green onion chopped - 4 cloves of chopped and minched garlic - 5 small slices of baby ginger roots - vegetable oil - salt - sugar - cooking rice wine - 1 egg white
Instruction:
Cooking the fish: - coat fish with corn starch - deep fried fish in vegetable oil until slightly golden - as the fish is cooking spread two paper towels over a plate and put the cooked fish on top of it. - lightly salt the fish and leave it there to cool
sauce: - heat up a frying pan with high heat - while it is heating up take a small bowl and combine 1 table spoon of corn starch with half a can of chicken broth. - add salt and sugar till the mixture is your desired taste (usually I go by what my mom tells me 1 portion of salt + 1.5 portion of sugar.) - add in 3 table spoon of rice wine to the mixture
Finishing the Dish: -Once the frying pan heats up, add about 1 table spoon of the oil you use to fry the fish into the pan - lower the heat to medium - throw in your 5 ginger pieces and minced garlic - watch your garlic carefully so that it won't burn (garlic cooks fast and can burn easily) - when you can smell the aroma of garlic rising from the pan, pour in the sauce mixture you've just prepared - pour in the remaining can of chicken broth and add 3 table spoon of rice wine. - let it shimmer for 5 min then add the can of crab meat and the egg white. ( make sure you mix the sauce with an egg beater as your are adding the egg white) *special note* Only add water according to how thick you want the sauce to be, if you feel that the consistency of the sauce is right where you want it, then there is no need to add anymore water. - When you see the eggwhite is finish cooking in the sauce, take the chopped green onion and add it to the sauce. - After adding the green onion take the plate of fish and place all your fish into a serving bowl. Then pour the sauce over on top and you're ready to eat! Best served with white long grain rice. Enjoy!
